It’s “put pumpkin in everything” month… otherwise known as October. Now it’s oatmeal’s turn to get pumpki-fied!
This pumpkin spice oatmeal will help tide you over until it’s time to overload on way too much Thanksgiving pumpkin pie. It’s also a great way to add flavor to those plain ol’ morning oats, not to mention a major boost to your daily intake of vitamin A. Check out the label: 200% in just half a cup! Love that! A sprinkle of walnuts and a drizzle of honey adds a bit of crunch and texture.
1 cup milk or almond milk
1/2 cup minute oats
1/4 cup pureed or canned pumpkin
1/2 teaspoon sugar
1/4 teaspoon cinnamon
1/4 teaspoon cloves
1/4 teaspoon nutmeg
drizzle of honey
1. Bring milk and pumpkin to a light boil and stir until it’s smooth. Add sugar and spices. Stir.
2. Add oats and allow to cook for 1-2 minutes until desired consistency.
3. Remove from heat. Put oatmeal in bowl and top with crushed walnuts and a drizzle of honey.
