I used to think of Rosemary as strictly a fall, Thanksgiving, or savory type of herb, but it’s quickly becoming one of my favorite summer ingredients. Earlier this week, I showed you how I’m using it to make Rosemary & Citrus Infused Water (so amazing and refreshing!) Now we’re moving into adult beverage territory. Rosemary and Grapefruit team up to make the ultimate sittin’ on the patio/Friday happy hour summer cocktail.
Part woodsy, part sweet, party tangy: that’s what I love about this Rosemary Grapefruit Cocktail. I fell in love with the pairing at Ray’s Cafe in Seattle after a day of paddle boarding on Puget Sound. Their Rosemary Grapefruit Drop is absolute perfection, and Rosemary, as a whole, was never the same for me after that. I decided to create my own little Rosemary Grapefruit cocktail for an at-home Happy Hour.
The magic is in this Rosemary-infused simple syrup. It’s so, so, so easy and it makes your home smell like a sugary Rosemary garden! I store my simple syrup in the fridge and bring it out on the weekends for cocktail hour.

Rosemary Simple Syrup
1/2 cup water
1/2 Cup Sugar
2 long Rosemary sprigs
(you can double the recipe and add an extra sprig of Rosemary if you need more for a large group or party)
Bring water and sugar to a boil in a sauce pan, stir sugar until dissolved. Add Rosemary sprigs to boiling water. Remove from heat. Let steep for at least an hour.
Rosemary Grapefruit Cocktail
1/3 cup of ruby red grapefruit vodka
1 tablespoon Rosemary simple syrup
splash of lemon juice
Rosemary sprig for garnish
1. Add vodka, simple syrup and lemon juice to a cocktail shaker with 3 cubes of ice. Shake until icy.
2. Strain into highball glass. Add ice, top glass with club soda and a sprig of Rosemary as a garnish.
