Chocolate Covered Strawberry Cookies

If chocolate covered strawberries and chocolate chip cookies had a baby, this is what they would look like. It’s a match made in cookie heaven!

Chocolate chip cookie purists will probably want to hunt me down and take away my cookie sheets after this one, but what can I say, I’m thinking outside the box. This is my latest attempt to incorporate fresh fruit into traditional recipes. A little sweet, a little sinful, all delicious. My blueberry chocolate chip cookies turned out so well that I decided to trade one berry for another. In this case, I needed to use up some stray strawberries… so here we are. It’s an amazing summertime treat, especially since fresh strawberries are bountiful right now.

This time around, I chose to use white chocolate chips – I’m obsessed – but you could certainly mix it up with milk chocolate or even dark chocolate chips. Or… mix two kinds together. Man, I should’ve wrote the blog before I baked the cookies. I think I brainstorm better that way! Oh well, I’ll put it in the memory bank for next time.

2 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 Cup butter
1 tsp vanilla
2 eggs
3/4 cup sugar
3/4 cup brown sugar
1 cup white or milk chocolate chips
1 cup chopped strawberries – about 8 strawberries

1. Mix flour, baking soda, salt and cinnamon in one bowl.
2. In separate bowl whip butter, sugars, vanilla and eggs.
3. Carefully combine the wet and dry ingredients and mix into a batter.
4. Refrigerate dough for 45 minutes until firm
5. Heat oven to 325.
6. Drop a small balls of dough onto greased cookie sheet.
7. Bake cookies for 13 minutes.
