It’s a sunny day here in Seattle, but after a streak of gray days I’m longing for the beaches of Florida. It’s been more than a year since we moved from West Palm Beach, so I decided it was time to bring a “slice” of the tropics here to the Northwest. To do that, I’m trying out two of my favorite things: Mojitos and Pie. Does it really get any better?
Key Lime Pie makes me think of summer, vacation, and The Old Salty Dog in Sarasota where they possibly have the best Key Lime Pie I’ve ever eaten. Plus, their mascot is a bulldog – so it really couldn’t be any more perfect! I never realized how easy it was to make this citrus treat.I was trolling the internet and sort of mixed and matched some recipes according to what I had on hand: enter the lemon and the Captain Morgan Private Stock! O-M-G-spot!
You can make a whole pie from this recipe, but I chose to make little torts with individually wrapped graham cracker crusts. No muss, no fuss, and everyone gets their own! Hopefully this brings a little ray of sunshine to your Spring!
Pre-made Graham Cracker Crusts (you can buy these ready-made from the store. Is it cheating, yes. Do I care, no!)
5 limes and 1/2 a lemon (enough to squeeze 1/2 cup of lime and lemon juice)
2 teaspoons of lime zest
1 14 oz can of sweetened condensed milk
4 Egg Yolks
3 teaspoons of rum
1. Whisk egg yolks and condensed milk in small bowl until smooth.
2. Add citrus juice, zest, and rum and mix together.
3. Fill your pre-made pie crust with filling mixture.
Bake at 350 for 15 minutes.
4. Cool in the refrigerator for at least 4 hours, the filling will harden up.
5. Keep in the fridge until you’re ready to serve!
Mojitos on the side: optional!!!!
Normally, my dog Rosie would get her moment in the spotlight at this point in the blog, but I thought I’d introduce you to my new friend Sally. She’s up for adoption at the Seattle Animal Shelter. I’M IN LOVE! I love Spaniel dogs and It’s rare to have one in the shelter. Today I had the privilege of getting her outside for a bit. I know she won’t be at the shelter long because she’s such a love bug and such an awesome dog!
