Zucchini Fries

I’m a sucker for munchies. Chips, nuts, pizza rolls, you name it. Tonight is a munchies kind of night. The Golden Globes are on! Award shows always call for a bit of glam that a bag of Doritos simply can’t offer…no, not even if you eat them out of a wine glass topped with caviar. I decided to whip up a snack that’s a bit more healthy and classy, yet can still be considered a munchie. Hey, it’s got the word “fry” in the title! Warning: does not taste like French Fries but still tasty if you are a veg-head like me!

2 zucchinis chopped into match sticks and halved
2 eggs
1/2 cup of panco breading
1/2 cup of fresh grated Parmesan
1 1/2 tablespoon oregano
1 1/2 tablespoon garlic powder

1/4 teaspoon cayenne pepper

Salt
Pepper

Dredge zucchini in egg mix
Cover and coat each stick well with dry mixture
Place on greased cooking sheet
Bake at 400 for 25 minutes, flip half way through until “golden” brown ( it is the Golden Globes after all)
Eat with marinara, ranch or your favorite dipping sauce!
